Fruit picking process. Our dedication and care during the process of picking and transporting olives is very important to us.
The olive oil in the fruit is found in perfect conditions but changes in its quality during the harvest.
The harvesting process is traditionally carried out by hand and not with mechanical tools that damage the olive fruit and bring significant damage to the fruit and lead to the loss of phenol.
Transport is done in crates or baskets within eight hours from the fruit picking to the processing process.
